Nothing screams Italian food like pasta, which is why when I was in Rome a couple of years ago, I leaped at the chance to take a cooking class on handmade pasta. Since then, I’ve made handmade pasta at least *a jillion* times and am so eager to share a traditional fettuccine recipe with you that requires A.) No pasta machine or fancy equipment B.) No special flour (allllll purpose, baby) and C.) is the perfect kitchen craft to master and a true labor of love 😋

But first, a few words on the humble noodle.
⁣

An archaeological discovery back in the olden days of 2005 revealed that China is home to the earliest evidence of noodles when the team recovered a bowl of them that were perfectly preserved and at least 4,000 years old! But how did they get to Italy? Well, history tells us there are a few options. One popular legend says that our good friend Marco Polo brought the technique of noodles home to Italy in the 13th century when he was galavanting around China. But! While Marco Polo may have brought plenty with him on his travels, noodles weren’t one of them. An Etruscan tomb from 4th Century BC shows natives making pasta, meaning pasta not only predates Western/Eastern exploration, it also predates the Romans. Some food historians will counter that even if the Etruscans were technically making pasta, it wasn’t like today’s and didn’t become popularized until the influence of Asian/Mediterranean trading.

Whether it was influenced by Chinese noodles or is an ancient Etruscan dish – one thing is true, pasta itself is Italian. No matter the length of time and spotted origin, Italians have claimed fame to pasta, and for that – I am happy. After all, it gave us incredible dishes like vermicelli alla puttanesca, rigatoni alla carbonara, and the classic tagliatelle alla bolognese…

It’s September!
In Georgia that means one thing - HARVEST! 🍇
Harvest season in Georgia is the age old (8,000 years in fact) tradition of reaping every grape imaginable throughout Kakheti, Imereti and Racha. How many you ask? A lot. Like a lot, a lot. In 2019 the harvest produced 271,000 tons or about 5 Titanics. (My measurements, I should work on them, I know.)

So let me tell you about a girl named Daria (@darikomogzauri) She’s not only my beautiful, wonderful, extremely smart and talented friend - she’s also THE Queen of Georgian Wine and Gastronomy. (proper cased title because it’s true) Anyway, Daria together with her friend Varvara created this miraculous subscription box of wine and local goods sourced from around the country - it’s called @wine_junkies · ღვინოზე შეშლილები and it is the real deal. There’s lots to love about it but what you really need to know is that Daria personally visits small wineries to select each month’s wine(s) and local delicacies.
