I love Soviet food - it’s such a fascinating cuisine and one that goes far beyond the realms of Cold War rations and canned beef. For me USSR food is two things. 1. It’s a way to learn about creative efforts to keep individual culture alive through food in countries absorbed into the Union. 2. It’s proof of the resiliency of Soviet families wartime and otherwise.

Each recipe from aspic to birds milk cake has a unique story to match from Stalin’s push for rabbits on the table to Khrushchev’s irritation with suckling pigs.

So - what shall I make first from these three?
