When I tell you Georgians love bread – I mean it. There is nothing they can’t do with a little bit of flour, water, and handwork. There are more than 50 (50!) distinct types of khachapuri, or stuffed bread throughout Georgia. The options are limitless from soft saucer-sized dough filled with mashed beans (lobio) to perfectly flakey herb and cheese stuffed bread (mkhlovani). Then, there’s everyone’s favorite – Adjarian Khachapuri aka a buttery, cheesy, eggy bread boat. The stuff of dreams.

Adjarian Khachapuri hails from Georgia’s Adjara region, an area that used to be known for some of the best sailors and fishermen in the country. The shape of the bread symbolizes the boats bobbing on shores of Ajara and the yolk on top? That’s the sun shining down on the seamen. In the years since Adjarian khachapuri was born, it’s become a staple on the Georgian table and a favorite among tourists and locals alike.

Special thanks to my lamazi megobaro(beautiful friend) @nata_liee____ who is from Batumi (in Adjara). She has given me loads of tips and tricks to ensure a delicious and authentic recipe and never fails to deliver on my tireless questions about Georgian traditions and food.

Here’s what you’ll need:

Dough: 2 cups of flour, 1/2 teaspoon of instant yeast, tsp of salt, teaspoon of sugar, 1/4 cup warm water, 1/2 cup whole milk, 1/2 tablespoon olive oil, 1 egg.

Filling: 2 cups fresh sulguni cheese, 2 cups fresh imeruli cheese, 3 tablespoons of matsoni, one egg yolk (for substitutions outside the Caucasus region see recipe notes)

Gilotsavt Saqartvelos tavisupleba!🇬🇪 Today is Georgian Independence Day. 102 years ago, Georgia declared independence from the Russian Empire in the wake of the Russian Revolution, and for the first time in 117 years, they were free. Only a few years later, they’d be invaded by the Red Army and absorbed into the Soviet Union by 1922. They’d continue to fight for independence for 70 more years until the Soviet Union’s dissolution in 1991. It would be hard. It would be bloody. But they’d persist.

While today technically honors the 1918 Act of Independence from the Russian Empire – it really speaks to the Georgian’s fight for freedom overall. However small, the cozy Caucasus slice of heaven is a proud and spirited nation that has had more than its fair share of trouble over the past several hundred years. From the Georgian–Seljuk wars to the Kruschev Protests, forced annexations, and the 2008 Russo-Georgian war, Georgians have fought tooth and nail for centuries for the right to speak, live, and believe freely. They’ve sacrificed their lives, land, the right to worship, and at many times, the right to their own language. Today that sacrifice is honored and remembered.

The Native Americans were no stranger to hardship. Years of systematic starvation, rape, pillaging, stolen land, and mass murder are just a few things that Native Americans suffered at the hands of colonialism. The American Indian Wars period, which lasted from 1622 – 1924, gave birth to some of the most influential and legendary Native American heroes in history. From peace driven interpreters to ruthless shaman fighters, here are a few you should know about.

Sitting Bull - The Hunkpapa Lakota who was the first chief of the entire Lakota Sioux and fought heroically in important battles such as Red Cloud’s War and The Great Sioux War of 1876. He also famously defied the Northern Pacific Railroad by walking into the middle of construction and enjoying a tobacco pipe.

Geronimo - The Apache leader, medicine man and fighter who broke out of not one, not two but three US reservations. His hunt required nearly a quarter of the US Army.

Osh-Tisch - The Crow “two-spirit” who was as famous for her soft femininity as she was being bold and ruthless in battles such as Rosebud and Little Big Horn.

Crazy Horse - Oglala Sioux
Crazy Horse who fiercely defended his land to the bitter end and aided in the defeat of General George Custer at the Battle of Little Bighorn. He is famously quoted as saying: “We preferred our own way of living, we were no expense to the government. All we wanted was peace and to be left alone. ”

Sarah Winnemucca - The Northern Paiute interpreter who used her linguistic skills to strengthen relationships between colonizers and Native Americans while spreading the truth of the mistreatment of her people.
