Slice and pit peaches (leave skin on) Preheat oven to 350F/176C
Combine peaches, 1 cup sugar, lemon juice and cinnamon in large pot - heat to boil. Reduce to light simmer for 3-5 minutes. Remove from heat.
Melt butter in 9x9 pan (or similar) in the center of oven for a few minutes
In a medium bowl, combine flour, milk, baking soda, 1 c sugar and mix until combined. (Don't eoer mix)
Add batter to butter pan, do not stir.
Add suared peach mix to batter and butter - again, do not stir.
Bake in center of oven for 35-40 minutes until golden brown on top.
Serve warm with a scoop of vanilla ice cream
